Kickstarting the series, Diana dives into the vibrant, healthful flavors of Vietnamese cooking with infectious energy. Guided by her flatmate, Khanh Ong, the proprietor of George on Collins, the duo crafts chargrilled parcels of fragrant beef wrapped in betel leaves — ba la lot. For dessert, Diana surprises Khanh with his favourite Vietnamese ice cream snack, kem chuoi. Later, Diana is joined in the kitchen by Jerry Mai, the chef and owner behind Pho Nom, Annam and Bia Hoi, who demonstrates how to make banh khot — mini rice pancakes that are best enjoyed with a freshly brewed Vietnamese beer, of course.
